Side note: in college I minored in exercise and sports science with an emphasis in nutrition. Nutrition is just a hobby for me, growing up my mom was big into healthy eating and nutrition, so I enjoy learning and discovering new healthy recipes and foods. Although, I am not a registered dietitian, this is what works for me and my body through out the day

For the most part I eat pretty healthy, not to say I never eat unhealthy foods, I am definitely human and my husband has the biggest sweet tooth/pizza cravings haha. For the most part though, once I find something I like I don’t mind eating it everyday. Below you can find what I eat and a healthy dessert recipe to try!

Breakfast : I usually have a piece of toast with almond butter or peanut butter, then coffee always. We try to eat vegan as much as we can, mostly for health reasons, so for my coffee I drink oatmilk it’s my favorite milk alternative.

Lunch : Now that I have time to cook my lunches I have been eating egg white sandwiches, which I really like for any meal. I usually prepare it with egg whites (omelet style) with a little bit of mozzarella cheese melted, garlic salt, mashed avocado, slice of ham, and lemon pepper.

Dinner : I’ve been a big fan of vegan buggers lately, I have tried the beyond and boca brands and highly recommend. I was skeptical to try them at first, but they are basically a bean burger, super good. Usually I put avocado, cheese, hot sauce and lettuce. I don’t eat them with a bun, but I love them with sweat potato fries on the side

Dessert : Because I have the biggest sweat tooth, this is where I try and get creative. Sometimes I will make a shake with peanut butter, oatmilk, banana and some vanilla protein. If I am craving some kind of carb dessert, my go-to is usually my fave type of cookie, oatmeal cookies (healthy version). Usually I will google a few recipes and try to make them as healthy as possible, substituting butters and sugars. Below is a great recipe I already modified for you, but you can find the original version here, enjoy!

Ingredients

•  1 1/4 cups oats
•  1 cup whole wheat flour
•  1 1/2 teaspoons baking powder
•  1 1/2 teaspoons cinnamon
•  1/2 teaspoon kosher salt
•  1/4 cup unsweetened applesauce
•  4 tablespoons oil – melted (I use coconut oil)
•  3 tablespoons egg-whites
•  1 teaspoon pure vanilla extract
•  1/2 cup honey
•  1/3 cup dark chocolate chips
•  1/4 cup raisins

Instructions

1. In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
2. In a medium bowl, combine the applesauce, oil, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
3. When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
4. Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

1. Make a TikTok with the family: If your not already doing TikTok videos don’t be afraid of jumping on the bandwagon! We have done a handful and they are so fun, we laugh at ourselves the whole time and laughter is what we can use more of these days, don’t you think? You can find my Tiktok here if you want to laugh a little.
2. Garden: I love when spring comes around especially after a long winter. Putting some color in-front of my house makes me happy. I don’t have the greenest of thumbs I will have to say, but I enjoy it
3. Skin-Care: Put on a mask or let your skin breathe for a little with no-make up, trust me your skin will thank you <3. Recently we tried this cold plunge face mask and I loved it! I highly recommend.
4. Get Moving: Getting into a workout routine is so hard to do, but once you get going it gets so much easier. You can start it out by going on walks or try a new fitness app (I use the sweat app). We also try and do things outside to take advantage of this weather like play soccer tennis or pickle ball in our driveway.
5. Netflix Marathon: There are so many good shows out right now, Tiger King (worth all the hype), Ozark (we have been watching since season 1), Peaky Blinders (LOVE), Elite, Schitts Creek, Black List, Good Girls, You, Love is Blind to name a few
6. Games: One of my favorites to do during this time! We have been making up games and turning them into the olympics and bringing out the board games. A few of our faves are sequence, blank slate, taboo, charades, friends and uno.
7. Try a new recipe: Now is the time to try new recipes or to make a spin on your own! I am a sucker for sweets so I have been trying healthy recipes and using the juicer more.
8. Talk to your loved ones: Since this is the time of distancing yourself, and might not be able to see your friends and family now is the perfect time to catch up. I’ve done a few zoom calls with friends and it was so fun! You can do it with family as well so everyone can see each other.
9. Organize: I am not much of a super organizer, but my closet has been calling my name to be re-vamped in a while. I don’t know why, but getting rid of clothes is sometimes hard for me because I always second guess myself of “what if this style comes back?” If we are being honest though, rule of thumb is if you haven’t touched that item in months then get rid of it (unless it is a seasonal item such as a coat). One motivator of getting rid of clothes is selling them on an app like poshmark to get some money out of it so you can get new items, shopping always puts me in a better mood :).
10. New House Project: We bought our house a short while ago and there are still so many projects we want to do! Some require us to hire help since the hubby and I are not super handy (we try though haha), but other projects we can definitely do ourself. Whether it’s finishing a room that needs some love or re-vamping a space in your house it’s a great time to work on projects! Need ideas? Pinterest and Instagram are my go-to when needing inspo, then youtube is usually my best friend if I want to learn any how-to’s.

We saw the tie dye print all over last year, but how are we feeling about it this year? The runway graced us with Dior, Alberta Ferretti and Oscar de la Renta, to name a few, giving us their own versions of this print. With association of sustainability arising in brands everywhere, eco-fashion and natural dyes seems to have brought this print back out and I am here for it.

Now that we are seeing more mainstream brands creating tie dye prints into a more modern look I am loving it. Not sure how to wear it? It goes perfectly with denim, either pants or some cool distressed shorts to channel a Cali vibe. For spring, I am really into the muted tones like this sweater I am wearing. Hi guys! Can I just first start off by sharing that I have no idea whats going on with our spring weather here in Utah. It snowed last week and was beautiful this weekend, then it is supposed to snow again this week, I am so confused haha! Right when I am thinking spring is in full throttle mother nature laughs and decides to let it snow. Not going to lie though…I still get excited when I wake up to snow, I think it is just the cali girl in me :).

I wanted to share some of my favorite finds with you today! As I am patiently waiting for spring weather, I am falling in love with all of the latest spring colors, flower prints and bows! I find myself heading towards a more romantic vibe lately and I think it is all the bows and ruffles that make such great little details to an outfit. I am loving this knot dress, and desperately needing this cute dress! Also have you noticed how scrunchies are back and in trend?! Hi guys! I have been trying to find more versatile clothing pieces lately to wear to work, weekend fun, or traveling. I found this cute white tee, found here, that I loved so much I got it in this color as well! It is something you can totally wear to work and dress up or wear it with denim like I did, even add a pair of leggings for an athleasure wear.

A couple weeks ago I went to Disneyworld and I wore these super cute shoes all day long. They are so comfy and kept my feet from aching until my legs hated me from walking everywhere haha! Besides my Adidas ultraboosts, found here, these are the second comfiest pair of sneakers I own!

Starting off the new year with positive vibes and a better me is always my goal. One top priority on my list is taking care of my body. A few things on my list this year is to drink more water, remembering to take essential vitamins, trying new fitness classes and finding ways to keep me motivated to stay fit. I love the feeling after a workout and how keeping active makes me feel overall, but the struggle is real and I am not always in the mood for a workout (especially when it is cold outside!).
